Smothered Potatoes
Ingredients:
· 5 medium-sized red potatoes
· 6 oz cream cheese, softened
· ¼ c. milk
· 1 c. sour cream
· 1 c. shredded cheese, plus ½ cup for top.
· 1 medium yellow onion
· 4 large cloves garlic
· 2 tbsp. dried dill
· Sea salt and cracked black pepper to taste
Preheat oven to 400 degrees.
Cut potatoes into bite-sized, uniform pieces. Put in a pot of cold water and bring to boiling. Cook for 20 minutes at rolling boil, or until pieces are fork tender.
While potatoes are boiling, chop onion and chop or press garlic. Add several tablespoons of oil to pan and heat. Sautee onions and garlic for about 20 minutes, stirring frequently, until caramelised.
Combine cream cheese, milk, sour cream, 1 c. shredded cheese, dill, salt, and pepper in a bowl. Mix well.
Oil an 8x8 baking dish. Drain potatoes and pour into baking dish. Add caramelised onions and garlic and mix lightly. Pour cheese mixture over potatoes and onions, spreading to cover if necessary. Top with remaining ½ cup shredded cheese and bake for 20 minutes, or until edges are brown and bubbling.
